Hervé Brisson is a small grower-producer in the Vallée du Petit Morin, a lesser-known Champagne subregion producing wines of distinctive mineral character. The 3-hectare estate converted to certified organic farming in 2016 and focuses on Chardonnay from vines averaging over 40 years old. Les Régales is vinified "sous bois"—fermented and aged in wood for over 10 months to develop aromatic complexity—then bottled unfined and unfiltered as Extra Brut (minimal dosage). The result is artisanal Champagne of real personality: single-parcel Blanc de Blancs with terroir transparency and refreshing purity.
