Last year, Champagne Chavost took New York by storm. We offered its inaugural vintage in this newsletter, and today we are so excited to share the newest release with you.

Until 2016, there was no “Champagne Chavost”. The village of Chavot-Courcourt is home to Flatiron favorite Laherte Frères, and a co-op founded just after WWII by Chavost winemaker Fabien Daviaux's great-grandfather. The villagers suffered greatly during the War: vines, tractors, tools, and even homes were lost.

Chardonnay and Pinot Meunier with a touch of Pinot Noir, this is Champagne with ripe fruit from the hang time, the incredible acidity as you would expect since there is no dosage, and the perfect terroir-vibrancy you dream of in unsulfured wines.

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs.
