Le Clandestin was born from a bet: that cooler, north-facing parcels in the Cote des Bar, long dismissed as second-rate, could yield Champagne of real complexity. Benoit Doussot, a Burgundy-trained winemaker, teamed with Bertrand Gautherot of Vouette et Sorbee to prove it, farming organically around the village of Buxieres-sur-Arce. Boreal is 100% Pinot Noir made as a white wine, pressed direct, fermented and aged with native yeasts in used oak, and bottled bone-dry with zero dosage. It's taut and savory, all baked apple, citrus rind, warm herbs, and crushed chalk, with nothing to hide behind. This is a magnum, made for the table and for keeping.
