One of our very favorite domaines in Burgundy, at grand cru level, in a vintage that managed real ripeness and real acidity at the same time. Chandon de Briailles farms its Corton parcels organically (certified since 1998) and biodynamically, with the soil worked by Comtois draft horses, ferments whole clusters in open wooden cone vats without pumping the wine around, and ages it 15 to 18 months in the estate's Cistercian cellars, roughly 85% in used barrels so the oak never speaks. Their Bressandes runs to 1.45 hectares across four parcels on the mid-slope of the hill, facing the Saone plain on iron-rich clay over limestone, the rounder and more generous flank of Corton. Of their 2005s this was the one built for the long haul, with a serious tannic and acidic frame, and two decades on it is opening out with years still ahead of it. Decant it an hour ahead and use a big glass.

"A perfumed and notably floral nose that is just beginning to display some secondary development before sliding gracefully into attractively vibrant medium-bodied flavors that possess a really lovely mouth feel. There is a trace of Corton masculinity to the impressively long and mouth coating finish that possesses impeccably fine balance. To my taste this has arrived at its maturity inflection point, which is to say that it could easily be held for another 2 to 5 years to allow the finish to soften further but at the same time there would be no harm in cracking a bottle now; just be sure to give it a bit of air first."
