Barsac's largest classified vineyard, and the racier end of the Sauternes spectrum: Coutet's unusually high share of Sauvignon Blanc gives its sweet wines a lemony cut that keeps them from ever feeling heavy. Barsac is the commune inside Sauternes whose growers may use either name, and Coutet, a Premier Cru Classe sitting behind a square thirteenth-century tower, farms 38.5 hectares of sand, red clay and limestone divided into forty-eight parcels, with vines averaging around sixty years old. The blend is roughly 75% Semillon, 23% Sauvignon Blanc and 2% Muscadelle, picked in successive passes that take only the berries noble rot has shriveled, then fermented and raised in French oak for about eighteen months in a cellar 110 metres long, the longest in the appellation. 2014 was an outstanding year for botrytis here, marked by lemony rot character and high acidity, which plays straight to Coutet's strengths. Serve it properly cold, and don't feel obliged to finish the bottle: an opened Sauternes holds in the fridge for a week or more.

"The 2014 Coutet has a slightly muddled nose, evident on two bottles that were opened. It eventually sorts itself out, scents of wild honey, dandelion, nettle, quince and melted wax. The palate is very well balanced and showed much more composure than the nose. This displays Coutet’s trademark crisp acidity, quite tensile, very pure with a long and tender viscous finish. There is a very good wine here but I just don’t think it showed on the day. Tasted blind at the annual Southwold tasting." —Neal Martin
