Haut-Bailly is the singular elegance estate of Pessac-Léognan — a Cru Classé de Graves with some of the oldest vines in Bordeaux and a house style built on finesse rather than weight. Under the Wilmers family (American owners since 1998) and the long-tenured Véronique Sanders (great-granddaughter of a prior owner), the estate has held its course with remarkable consistency. 2007 was a difficult, lean vintage across Bordeaux, but Haut-Bailly is exactly the kind of property that handles a tough year well: rigorous selection, a gentle hand, and the wisdom of those old vines all conspire to produce a wine of elegance and freshness even in challenging conditions. Eighteen years on, the 2007 is drinking beautifully — cedar, graphite, dried red fruit, tobacco, a savory earthy lift. Mature, balanced, ready.

"The 2007 Haut-Bailly has a tertiary, earthy nose and touches of cigar box filtering through the light black fruit. Nevertheless, it has a tough time following the last three vintages. The palate is balanced and fleshy with fine acidity. it is smooth in texture with a touch of balsamic lending edge towards the finish. It tapers slightly because of the challenging growing season. Drink now and over the next five to eight years. Tasted at the Haut-Bailly vertical at the château." —Neal Martin

"Perfect for drinking now but sure to last for another decade or more. The aromatics of this are just gorgeous, unfurling in the glass to show russet and undergrowth, liquorice, soft black chocolate and savoury but welcoming berry fruit. This 2007 vintage saw a cool summer but a warm September and October, meaning careful work in the vineyard and patience was necessary. Underestimated on release. The wines might not have the structure for long ageing as with 2010 or 2000, but they are blossoming right now, and offer great pleasure; classic balance."
