Madeira is the only great wine in the world that gets better because someone deliberately heated it. Cossart Gordon has been shipping the stuff since 1745, and Verdelho is their medium-dry middle ground: fermented partway, then fortified with grape spirit so a little sugar survives. The wine then spends years in cask, warmed slowly in the lofts of Funchal, which is where Madeira picks up its trademark tang and its famous near-indestructibility. Ten Year Old means the blend averages roughly a decade of that treatment. Serve it lightly chilled as an aperitif and it will wake up your whole palate. Best part: once you open it, it keeps for months, so there's no pressure to finish it. The 500ml bottle makes it an easy place to start.

"The solera NV Verdelho 10 Year Old was fortified to 19% alcohol and aged through the natural "canteiro" method. It has a pH of 3.44 and 62 grams of unfermented sugar.
