Jeff Morgan founded Covenant to prove that kosher winemaking and Napa Cabernet could achieve the same quality standard—and the 2023 vintage makes the argument emphatically. Cool, consistent weather and extended hang time in Oak Knoll (Napa's cooler, marine-influenced sub-region) brought alcohol levels down and tension up. One hundred percent Cabernet Sauvignon that tastes like precision rather than power: dark fruit with structural clarity, freshness that invites another sip. Made under OU kosher supervision, demonstrating that serious winemaking and religious practice complement each other.

"Largely based on Oak Knoll District fruit this year, Covenant's 2023 Cabernet Sauvignon spent 18 months in 50% new French oak. Red-fruited and forward, redcurrants and cherries abound, alongside a hint of eucalyptus. It's full-bodied, supple and ripe in feel across the mid-palate, then finishes a bit tart and crisp." —Joe Czerwinski

More about Covenant

Covenant Wines is the real deal—an urban Berkeley winery making minimal-intervention, natural kosher wines from California and Israeli vineyards since 2003. Native yeast ferments, unfined, unfiltered, vegan. They make 8,000 cases a year without compromising an inch of principle. Cabernet, Syrah, Pinot Noir, Chardonnay, Rosé. Sources from great California vineyards and the Galilee. This is what happens when you actually care about the wine more than the category.

Tasting Profile

Château Samion is only a few miles from Pétrus, in Lalande-de-Pomerol. Jean-Claude Berrouet works all naturally there—both in the vines and in the cellar—and produces only Merlot, the grape that dominates Pétrus. Since his 2007 retirement, he and his son have devoted themselves to applying everything they know about making powerful Merlots on clay-rich soils at their own little domaine.

They tend the 45-year-old vines and make the wine following the same methods (and intuitions) that were applied to making Petrus, though adapted to the different circumstances (a layer of gravel above the clay here makes a difference, and there's only 20% new oak).

The attention to detail shows in the wines: the pure expression of Merlot grown in Pomerol-like soils is true, old-school pleasure. But beware, because they work in a very classical style—no modern wine-making tricks here—the wines can use a long decant if you drink them before they've had a few years in bottle. Of course, this style at this price makes the Samion wines great options for any reasonably-priced cellar.
