The name is literal. In November 1248 a vast section of the limestone cliff of Mont Granier broke away and buried the villages below, and the field of shattered rock and gravel it left behind is exactly where Apremont's vines grow today. That rubble drains hard and fast, which is why Jacquere - the local white grape, and the only one permitted for Apremont - comes out of it so taut and stony. Brothers Denis and Didier Berthollier farm it from their base in Chignin, working certified organic and biodynamic across steep hillsides their forebears had given up as too difficult, with fifty-year-old vines, native-yeast fermentation in tank and bottling unfiltered. It is an Alpine white in the truest sense: light, bracing and built for cheese. Serve it properly cold.
