In 2020 the Cote de Beaune started picking in the third week of August, and Volnay was among the first villages into the cellar. Thick skins and very little juice meant growers needed noticeably more fruit to fill each barrel, and the wines came out deeply colored and concentrated but braced by an unusually firm tartaric backbone, so the freshness is real rather than borrowed. In most hands that combination turns showy; in Lafarge's it stays Volnay. Frederic Lafarge and daughter Clothilde farm the village parcels of Les Famines, Les Buttes and Cros Martin, roughly 60-year-old vines on clay-limestone, with Ecocert organic and Demeter biodynamic certification, horses in the rows and chickens working the weeds. The wine is fully destemmed, fermented with ambient yeasts over two to three weeks, aged 18 months in used barrels and bottled unfined and unfiltered. It's built for the long haul, so give it a few more years in the cellar or a good long decant if you're opening one now.

"This is among the reference points for village Volnay. It is a wine with a winningly ripe aroma of blackberry, spice and roses. The texture is supple and approachable, but with time one sees the concentration and subtle tannic grip - there are no hard edges, but noticeable reserves of power. It is produced from the 1.7ha of village vines that don't go into the Vendanges Sélectionnées. They are spread over six lieux-dits, including Les Famines, Les Buttes, and Des Cros Martin. The fruit is destemmed and gently fermented before ageing in older casks."

Michel Lafarge is Burgundy royalty—one of the greatest names in the game. His Aligoté comes from nearly 90-year-old vines (almost extinct elsewhere in Burgundy), planted in 1937. Whole-cluster pressed, fermented in steel with indigenous yeasts, aged in older barrels. It opens with honeysuckle and yuzu and tastes like centuries of tradition in a glass.
