The exception to the exception to the rule: a Bourgogne Passetoutgrain built not from outlying sites but from fruit of legendary villages. Sebastien Odoul co-ferments Gamay from Chambolle-Musigny with 50-year-old Pinot Noir from Morey-Saint-Denis, marrying Pinot elegance with Gamay's juicy accessibility while echoing both villages' clay-limestone terroirs. His minimal-intervention winemaking lets the fruit sing, and the structured 2023 can age a good five years. A tiny-production sleeper that punches absurdly above its category.
