The name declares its contents: G (Chardonnay), P (Poulsard), S (Savagnin)—three indigenous Jura varieties co-fermented without additives and bottled according to lunar cycles. Domaine Pignier traces to 13th-century Carthusian monks, with the family taking ownership in 1794. Now Demeter-certified for over 20 years, this is biodynamic practice with deep historical roots. The 2023 shows the vintage's generous character—ripe, supple, juicy with citrus and floral notes. "The 2023 Blanc Côtes du Jura GPS was fermented and briefly aged in a combination of oak barrels and clay amphorae with regular topping-up and no additional SO2. Ripe yellow apple, pear and a slice of melon rise from the glass. Meeting the palate with a creamy texture, the acidity here falls a bit short and takes away some of the wine’s freshness. Viticulture
Vineyard tended biodynamically, Demeter inspection and certification since 2003: applications of horn manure, silica and herbal teas. Hand-harvested with sorting in the vineyard.
Vinification
The three varieties are slowly pressed together. Fermentation and ageing in oak barrels without any added SO2, with regular topping-up. No addition of yeast, sugar, or any other additives.
Aging
Aged 7 months in barrel over winter, bottling takes according to the the lunar calendar, still without the addition of any SO2. The bottles are stoppered with natural firebranded corks.
