This is the Jura's signature trick in a bottle: Savagnin left in cask without topping up, so a film of yeast forms across the surface of the wine, exactly like the flor in a fino Sherry. That veil protects the wine from full oxidation while slowly building the nutty, savory, curry-spice character that makes the style unlike any other white in France. Domaine Pignier is the only working wine estate left in the hamlet of Montaigu, about 40 kilometers south of Arbois, which means their Demeter- and Ecocert-certified biodynamic farming happens with no chemical drift from neighbors. The vines sit on clay and limestone in the reculees, the blind valleys cut into the Jurassic shelf, and the wines age in cold underground cellars built by Carthusian monks in the 13th century; the Pignier family bought the property in 1794 and siblings Jean-Etienne, Antoine and Marie-Florence run it today. Serve it cool rather than cold, in a proper glass, and give it air. It is bone dry, unfortified, and an opened bottle holds up for days.

The Pignier family acquired the estate in 1794 and continue working it today with biodynamic principles. Perfect Pairings

The classic partner is Comte, the older and crunchier the better, and chicken in a cream-and-morel sauce is the regional dish it was built for. It also handles curry, roast pork with mustard, and anything with walnuts or aged Parmesan.

Tasting Profile

Dry white with aromas of walnut, bruised apple, dried herbs and toasted almond. The palate is medium-bodied and firm, with brisk acidity, a saline, almost briny mineral edge, and a long nutty finish. Distinctive and savory rather than fruity.
