Vinsobres sits high enough that it makes a fundamentally cooler, fresher southern Rhone red than its famous neighbors, and in 2006 it became the first standalone Cotes du Rhone cru in the Drome Provencale. Domaine Vallot farms hillside parcels between 200 and 450 meters on rocky, limestone-rich soils with sandy patches, altitude that shows up in the glass as lift and finesse rather than heat. Anais Vallot is the fifth generation here, and the estate is certified organic by Ecocert and biodynamic by Demeter. The 2021 is roughly two-thirds Grenache with Syrah and a splash of Mourvedre, from vines between 40 and 65-plus years old, picked plot by plot, destemmed, fermented in underground concrete with about two weeks on the skins, and raised a year in concrete with no oak and almost no added sulfur. That means pure fruit and stony detail with nothing cosmetic layered on top. Drink it now and over the next five or six years.

Tasting Profile
