Assyrtiko without the Santorini price: Christos Zafeirakis grows Greece's great white grape on the Thessalian mainland and gets all the lemon zest, sea spray, laurel and honeysuckle without the weight and alcohol the island versions can carry. Santorini has a finite amount of land, much of it disappearing under hotels, which is a big part of why its wines cost what they do; Tyrnavos, in the bowl of a valley in central Greece, has no such problem. Christos is the fourth generation here, trained in Italy — he worked in Barbaresco and still adores Piedmont — planted his first organic vineyard in 2005, and is best known at home for rescuing the nearly-lost indigenous Limniona grape. His trick for making something this fresh in a hot, dry place is to harvest early, which keeps the wine crisp and delicately aromatic. It has been one of our best-selling Greek wines for years, and it's an easy everyday white.

Christos Zafeirakis is the fifth generation of his family to make wine in Thessaly, Greece. He studied in Milan and worked in Tuscany and Piedmont before returning home to grow the estate to 8 hectares, all certified organic. His wines aren't big or flashy—they're some of Greece's freshest, most approachable expressions, proof that the Balkans are making serious wine.
