A fully mature bottle of one of Barolo's landmark modernist wines, made by Domenico Clerico himself in a great classical vintage. Clerico was one of the original Barolo Boys, the crew who brought French barrique and shorter macerations into the Langhe playbook, and Pajana is one of his flagships: a single-vineyard Barolo from inside the Ginestra MGA in Monforte d'Alba, planted in 1971 on Lequio-Serravallian marl, first bottled in 1990. The 1999 was a firm, structured, long-haul vintage in Barolo, and at more than a quarter century it has arrived exactly where that combination promises, with the barrique polish long since absorbed into the wine. Domenico passed in 2017 and the estate continues under Oscar Arrivabene, his longtime right hand, so bottles from Domenico's own hand are finite. This one comes from a private cellar and is ready now, with no reason to wait. Stand it upright for a day or two, then decant gently off the sediment about an hour before pouring.

Perfect Pairings

Brasato al Barolo, osso buco, truffled risotto or roast game birds. At this age it is also superb with aged Castelmagno or a plate of tajarin with butter and white truffle.

Tasting Profile

Fully mature Nebbiolo: dried cherry, rose petal, tar, leather, truffle and a flicker of cedar spice. Full-bodied but resolved, tannins melted into silk, acidity still bright, with a long savory finish. Drink now.
