Etienne Calsac is one of the rising grower-stars of the Cote des Blancs, who took over his grandparents' Avize vines in 2010 at age 26 and began making his own terroir-driven Champagne instead of selling the fruit. Rose de Craie ('chalk rose') is his pink cuvee, named for the chalk soils that define the region, made in a delicate, gastronomic style rather than a fruit-bomb rose. Built on the 2023 base, it's the kind of grower rose that drinks as happily through dinner as it does on its own.

"The NV Extra Brut Rose de Craie is a Chardonnay-dominant (92%) rosé with 8% Pinot Noir. Fruit comes from the Sézannais, the Côte des Blancs and the Marne Valley. A creamy touch of yellow apple makes a brief appearance on the shy nose. The palate is alive with frothy mousse, foaming with abandon and showing off the slender wine that is underneath. Gentle white pepper completes the rounded, yet fresh and still slightly astringent fruit. Youthful and absolutely vivacious." —Antonio Galloni
