La Main Sur La Cœur—hand on the heart—is a vintage-dated grower Champagne from a tiny family operation in Vertus, a Premier Cru village on the Chardonnay-rich Cote des Blancs. Guillaume Gallois trained under Fabrice Gass of Alexandre Filaine, and he brings that low-dosage, barrel-influenced sensibility to his own patch of Vertus terroir. This 2017 leans on Chardonnay with a chunk of Pinot Noir, spends time in barrel and years resting on its lees before disgorgement, and comes out bone-dry—the dosage barely registers. It's the kind of honest, small-scale Champagne that rewards drinkers who've grown tired of big-house uniformity.
