A cuvée that blends all three Champagne grapes — Chardonnay, Pinot Noir and Meunier from Cumières, bottled with zero dosage like everything else here. Laval farms two hectares in the Premier Cru village, split across seven parcels, with an average vine age over thirty years and the oldest past seventy; the family went organic in 1971, decades before anyone in Champagne thought it was a reasonable idea, and has been Ecocert-certified ever since. Pressing happens in a traditional Coquard vertical press holding only 2,000 kilos — the smallest size Champagne permits — which is the whole point: parcels stay separate, and the blending happens later, by choice rather than by default. Cover crops in every plot, organic compost, regular tilling to push roots deeper. This is one of the most quietly fanatical addresses in the region, out of a cellar in Cumières marked by nothing more than a barely legible placard above the doorbell. Open it in a white-wine glass rather than a flute and give it a few minutes in the air.

Perfect Pairings

Oysters on the half shell, fried chicken, a roast chicken with lemon and herbs, gougères, sushi and sashimi, or a plate of aged Comté.

Tasting Profile

Dry and bone-straight — no dosage at all. Aromas of lemon zest, green apple and pear, with a chalky, almost saline edge. Medium-bodied with fine, quiet bubbles and high, clean acidity. The finish is long, dry and mineral rather than fruity.
