Dessus la Carrière means "above the quarry," which is exactly where these vines grow: steep limestone bluffs above an old stone quarry outside Chablis, from the lieux-dits Semon and Paradis, the vines planted directly on the rock. It is technically village Chablis, but there is so much Kimmeridgian limestone under it that the wine drinks like a serious premier cru — which is why we chase it down every year. Gilbert Picq's three children run the domaine from Chichée, and their formula never changes: native-yeast fermentations, stainless steel only, no oak anywhere in the cellar to blur the stony freshness. 2024 was a punishing season here — April frost, a May hailstorm, mildew through a wet flowering, and yields that came in a fraction of normal — but the wines that made it are classic Chablis: moderate in alcohol, citrusy, and thoroughly saline. Because the family owns no grand cru, the prices have never run away. Drink it over the next four or five years.
