Giovanni Canonica is a hidden legend in Barolo, running a small agriturismo with wine cellars beneath it. He began bottling under his own name in 1983—pioneering natural winemaking in Piedmont when such an approach invited ridicule. For years, his only vineyard was 1.5 hectares in Paiagallo, a site between 300 and 400 meters elevation just above the village of Barolo. Only three proprietors farm Paiagallo, and Canonica is the sole producer of a mono-vineyard bottling. His methods are entirely traditional: 30-40 day macerations with indigenous yeasts, aging in cement and Slavonian oak botti, no enzymes, no fining, no filtration. The 2010 vintage is legendary in Barolo—ideal conditions produced wines of extraordinary depth with vibrant acidity. Wild cherry, citron peel, floral notes, and fine ripe tannins. Still relatively young. Decant and cellar through the 2030s.

Deep, dark and pliant in the glass, the 2010 races across the palate with expressive dark red stone fruits, cinnamon, crushed rose petals, and new leather. Even though there is plenty of vintage 2010 structure, the Paiagallo offers lovely radiance and purity.
