Occhio di Sale means "eye of salt," a nod to the salty, gypsum-rich soils of Giuseppe Cipolla's farm near Agrigento on Sicily's southern coast. This rising organic star makes the wine as a dark rose (or light red, depending on your mood) from mostly direct-press Nero d'Avola with a short co-maceration of white grapes like Catarratto, Inzolia, and Moscato d'Alessandria. Fermented in neutral barrel and fiberglass, it comes out an electric magenta with floral lift, citrus, and racy acidity. This is the ideal summer refresher, equally happy poolside or next to grilled fish. Serve it well chilled.
