Not the faintly fizzy, off-dry Vinho Verde most people have in mind: this one is dry, still and textured, built for the dinner table. The vines grow on granite about nine miles from the Atlantic, close enough that Gota bottles it under Vinho Verde's Atlantic-coast designation, and the blend leads with Loureiro at 35%, filled out with Pedernã, Trajadura and Azal. Fruit is hand-harvested from dry-farmed vines, then fermented and left on its lees in concrete until bottling — no oak anywhere, which is the point. You keep Vinho Verde's low alcohol and Atlantic bite and gain real weight and salinity. Serve it cold but not ice cold.
