Sparkling rosé almost always costs more than its white counterpart; this one does not, and it is made with more care than most. It is built as a blanc de noirs from Pinot Noir and Pinot Meunier — pressed pale off black grapes — with just a few milliliters of Pinot Noir red wine added at the end for color, which is why it lands at that old-fashioned salmon and onion-skin hue rather than bright pink. Tradition is Griesel's entry tier, around sixteen months on the lees and finished dry, and the granite bedrock of the Hessische Bergstraße comes through clearly in the wine's stony, salty spine. Griesel has been making traditional-method Sekt in Bensheim since 2013, in the cellars of the former Hessian State Winery. One practical note from people who have poured it: there is a touch of reduction on opening, so give it a few minutes of air or a quick swirl and it opens up beautifully.
