Pic Saint-Loup is the Languedoc's coolest, northernmost appellation, and this is one of the reasons people make the drive: a red of real freshness and grip from the rugged limestone slopes below the Pic itself. Syrah leads at 50%, with 30% Grenache and 20% Mourvèdre, grown on clay-limestone and red clay over lower-slope scree studded with "gravette" gravel — poor, rocky ground that keeps yields honest (36 hl/ha here) and the wine tightly wound rather than jammy. Vinification is traditional and the ageing happens in foudre, big neutral wood that adds no vanilla and lets the herbs and stones through. The Ravaille brothers joined forces to plant vines here in 1992, on land that had been sheep and cheese country, and they farm these steep slopes biodynamically; the estate is certified organic. The three fish on the label nod both to the legend of Saint Loup and to the three brothers themselves. It drinks beautifully now but has a good decade in it, and for what southern French reds of this seriousness usually cost, it's an easy yes.

Perfect Pairings

Lamb chops over coals with rosemary, grilled merguez, daube of beef with olives, or a roast leg of lamb with garlic and thyme. Serve it warm-ish — 18-19°C, per the family.

Tasting Profile

Black olive, brambly dark fruit and wild garrigue herbs on the nose. Medium to full bodied and chewy, with firm but ripe tannins and enough acidity to keep it refreshing rather than heavy. Dry, savory, and long on the finish, with a stony edge.
