Sixty-five grams of residual sugar and 7.5% alcohol, and it still finishes like a wine you would happily call off-dry — that is the Saar's great trick, and Falkenstein performs it better than almost anyone. This is a completely separate cask from the estate's Alte Reben Kabinett, drawn from a different part of the Krettnacher Euchariusberg and picked riper, then left to ferment on wild yeasts until they simply stopped; each cask goes into bottle under its own AP number, which here works as the wine's name rather than as paperwork. Erich Weber and his son Johannes prune to a single flat cane per vine, press whole bunches in an antique press and do everything in thousand-liter oak — the estate owns no tanks at all. Broader and more overtly fruity than the Kabinett, it has the sweetness to stand up to food that would flatten a drier Riesling. From a private cellar; at ten years old the fruit is turning honeyed, and it has decades left.

"Harvested from above where this year’s trio of Euchariusberg Kabinetts was picked, this Riesling with an eye-watering 2.6 pH manages to hold 65 grams of residual sugar to a merely modest impression of sweetness, and one entirely supportive of the wine’s luscious white peach and purple plum. Lime and grapefruit confer bright animation and refreshment; hints of seedy white currant supply invigorating crunch; and a nettle-like tingling sends shivers up my spine. "The 2016 Krettnacher Euchariusberg Riesling Spätlese (AP #14) is terribly clear, fresh and coolish on the nose. Lush and intense on the palate, with generous but precise and elegant fruit and remarkably ripe, perfectly integrated acidity in the finish (11.3 grams per liter; pH 2.6!), this is a complex, sappy, very salty and round Spätlese from one of the finest vineyards along the Saar. 7.5% alcohol. The Webers bought this Saar estate in 1981 and decided to do everything in barrel—fermentation, elevage, everything. No tanks at all. Each Fuder gets bottled separately, a restoration of old-time practice that lets you taste the micro-variations between casks from the same site. Minimal intervention since 2021-certified organic; this is Mosel winemaking as philosophy.

Perfect Pairings

Sichuan mapo tofu, Thai larb, Peking duck pancakes, pork belly with apple sauce, or Roquefort with walnuts.

Tasting Profile

Yellow peach, apricot, mandarin peel and honey over smoky slate. Only 7.5% alcohol, so it stays light despite real sweetness, and the acidity slices straight through it. Juicy, faintly salty and long on the finish.
