The clearest lesson in this whole vertical: the 2019 Kabinett came in at 84 degrees Oechsle and this Spätlese at 88, barely four degrees apart, yet one finished near 45 grams of sugar and this one at 56 — and the difference on the palate is unmistakable. That is what bottling cask by cask is for. This is Fuder Ternes, one thousand-liter barrel from its own parcel high in the Krettnacher Euchariusberg, and it carries more weight, more breadth and more yellow fruit than the ungrafted old-vine Kabinett off the same hill in the same harvest. Johannes Weber began picking on September 14, exceptionally early, after May frost and a July heat spike above 40°C had already cut yields to about 25 hectoliters per hectare. At 8% alcohol it is still a featherweight, the sweetness sitting on a frame of Saar acidity that keeps the whole thing lifted; from a private cellar, delicious now and likely to outlive most of what you open beside it.

"Issuing from a parcel in the Gross Schock sector known as “Ternes” (which name now appears in tiny print on the label), the 2019 Riesling Krettnacher Euchariusberg Spätlese A.P. #14 delivers scents and flavors of gooseberry, green plum, pear and lime, making for a pungently penetrating, bright, tart-edged overall performance, with berry seed crunch and fruit seed piquancy, smoky hints of black tea and Szechuan peppercorn all serving for gum-tingling invigoration. The finish here is undeniably slightly sweet-sour in tension, not to mention almost strident in brightness and sheer intensity. The Webers bought this Saar estate in 1981 and decided to do everything in barrel—fermentation, elevage, everything. No tanks at all. Each Fuder gets bottled separately, a restoration of old-time practice that lets you taste the micro-variations between casks from the same site. Minimal intervention since 2021-certified organic; this is Mosel winemaking as philosophy.

Char siu pork, roast duck with cherries, sweet-and-sour prawns, or Stilton with a ripe pear.

Tasting Profile

Yellow peach, apricot, tangerine and a wisp of smoke off the slate. Noticeably sweeter and broader than the Kabinett, yet only 8% alcohol, with zesty acidity holding it in shape. Juicy through the middle, long and saline at the end.
