Grand Cru Clos de la Roche from a quarter-hectare that a Burgundian couple gave away to the hospital. The Hospices de Beaune was founded in 1443 as a charity hospital for the poor, and over the following centuries donors left it vineyards to fund the work — an estate that encompasses the entire Côte d'Or. Every year on the third Sunday in November the new vintage is sold by the barrel at the Hospices auction, but the buyer has purchased an unfinished wine. It still needs an éleveur to raise, age and bottle it. This Clos de la Roche comes from vines in the lieu-dit Les Froichots, mid-slope in the Grand Cru, donated to the Hospices in 1991 by Monsieur and Madame Cyrot-Chaudron, with two-thirds of the plot planted in 1972 or earlier. The barrel was aged and bottled by Lucien Le Moine, the Beaune house Mounir and Rotem Saouma founded in 1999 specifically to buy barrels of great Burgundy and finish them their own way — long on full lees, barely racked, bottled without stripping. 2009 was a warm, generous Côte de Nuits vintage that gave fleshy, low-acid wines, and this one is now fully mature. Open it for a table that will pay attention.
