The vineyards behind this wine are a UNESCO World Heritage site, and one look explains why: black basalt fields on a volcanic island in the mid-Atlantic, topsoil created by breaking rock by hand, then carved into thousands of dry-stone corrals called currais — roughly four meters square apiece — to shelter low bush vines from Atlantic wind and salt. Ilha do Pico is the island's cooperative, founded in 1949 and made up of nearly 300 micro-scale farming families, and like Produttori del Barbaresco it's proof that a co-op can be the best address in its region rather than merely the safest. Terras de Lava is the entry point: mostly Arinto dos Açores, a variety indigenous to these islands and grown essentially nowhere else, rounded out with a handful of other white varieties. It's fermented entirely in stainless steel and left four months on its lees, with no oak and no malolactic, which keeps everything taut. If you like Assyrtiko or Etna Bianco, start here.
