Joh. Jos. Prüm makes Rieslings that arrive on the market wound tighter than a spring and reward decades of patience. Run today by Dr. Manfred Prüm and his daughter Katharina, this is one of the very top tier of Mosel estates, alongside Egon Müller. Graacher Himmelreich (the Kingdom of Heaven) is the most famous vineyard in Graach, steep blue Devonian slate with prime southerly aspect. Auslese sits one step above Spätlese on the Prädikat ladder, made from selectively harvested ripe fruit. The 2007 was an outstanding Mosel vintage, and eighteen years on this bottle is just entering its prime drinking window, with the structure and concentration to age another two to three decades. Buoyant, weightless sweetness braced by laser-precise Mosel acidity.

"Musk melon, peach, black currant, and botrytis-inflected suggestions of caramel, white raisin, and pungent spice fill the nose from Prum’s 2007 Graacher Himmelreich Riesling Auslese. A considerable measure of yeasty and CO2-engendered aromas needs to clear off before this really begins to show its formidable stuff. Creamy in texture and quite unlike the corresponding Spatlese, it displays more than enough energy, concentration, and sheer length, but needs time to harmonize and focus." —David Schildknecht

Spicy Thai or Sichuan dishes, seared foie gras, blue cheese, or a fruit tart with stone fruit. Equally lovely sipped solo on the back porch as a contemplative aperitif or after-dinner pour.

Tasting Profile

Honeyed yellow peach, apricot, white flower, candied citrus peel, slate, and the first whispers of petrol. Sweetness floats above electric, almost crystalline Mosel acidity. Filigreed and weightless, with a long, mineral, salt-edged finish.
