Jonathan Didier Pabiot's Pouilly-Fumé Léon is drawn from older vines on flint, limestone, and Kimmeridgian marl in Les Loges. The 2023 vintage continues his commitment to biodynamic farming and hands-off winemaking. Grapes are harvested manually and fermented with native yeasts.

Aged 12–18 months on lees in stainless steel, concrete, and a small portion of oak, this cuvée is named after Jonathan’s son. It represents the most refined expression in Pabiot’s range, emphasizing purity, texture, and the region’s signature minerality.
