Jonathan Didier Pabiot named this cuvee after his son Leon—there's an Elisa bottling for his daughter—so this is family business in the most literal sense. It's also proof that Pouilly-Fume can be something far more soulful than a generic Sauvignon Blanc. Pabiot was the first biodynamic estate certified in the appellation, and "Leon" draws on older vines rooted in flint, limestone, and Kimmeridgian marl. Native-yeast fermentation and time on the lees give it a fine-boned, mineral precision that's a world away from the loud, grassy stereotype. This is Loire Sauvignon with real depth—crisp, flinty, and quietly serious.
