Greves takes its name from graviers - gravel - and that is the whole story of the wine: a steep mid-slope parcel at the northern end of the Beaune appellation, on small stones mixed through brown earth, giving a red that is firmer and more mineral than the softer, sunnier southern end of the commune where Clos des Mouches lies. The Romans worked this hillside above the town, and it has been considered one of Beaune's two or three best Premier Crus ever since. Drouhin, family-owned since 1880 and farming organically since 1990 and biodynamically after that, vinifies it with 20 to 50% whole clusters, native yeasts, two to three weeks in open vats with hand punch-downs, then 14 to 18 months in French oak with a quarter of the barrels new. 2019 is the vintage's other half of the argument - a hot, dry year that gave small berries and unusually concentrated wines, but with acidity that kept them upright. This is one to decant or, better, to leave alone a few more years; the house puts it in its stride between ten and twenty-five years from the harvest.
