Aligote from an estate that has farmed without chemicals since the early 1950s, which is roughly forty years before anyone in Burgundy thought that was a good idea. Julien Guillot works the Clos des Vignes du Maynes in Cruzille, in the northern Maconnais, on clay and limestone slopes that the monks of Cluny were already planting more than a thousand years ago. His grandfather Pierre bought the property in 1952 and immediately dropped herbicides, insecticides and sulfur; his father Alain kept it up; Julien converted to biodynamics when he arrived in 1998. Everything here is hand-harvested and fermented with native yeasts, with little or no filtration and no added sulfur, and the results make the case that Aligote is a real Burgundian white grape rather than the thing you top with cassis. Light-bodied, high-acid and saline, it is a white to drink young and cold with food on the table.

Perfect Pairings

Built for oysters, clams and a raw bar generally, and just as good with a garlicky snail-and-parsley butter or fried smelts. It also works well with goat cheese from the Macon and with a simple roast chicken and lemon.

Tasting Profile

Light-bodied and bracing, with green apple, lemon pith and white flowers over a chalky, almost salty core. Acidity is high and the texture is lean but not thin, with a touch of orchard-fruit flesh from the native-yeast ferment. Finishes dry, stony and clean.
