Same legendary vineyard, one rung higher up the ripeness ladder. If the Saumagen Kabinett Trocken dances, this Spätlese Trocken strides—riper grapes off the same Roman limestone quarry, vinified just as dry but broader, denser, and more intense. Koehler-Ruprecht harvests these bunches later for extra concentration, then raises the wine naturally in old casks until it's miraculously both powerful and precise, with a heart of limestone and seemingly endless layers. This is one of the benchmark dry Rieslings of the Pfalz, firmly dry and practically vibrating with minerality. It's a twenty-five-year wine—open it now with a great meal, or bury it and forget it for a decade.

"The 2021 Riesling Kallstadter Saumagen Spätlese trocken has a touch of dried lime and grapefruit zest on the nose, joining in with the aromatic pear and lovely Reine Claude and Mirabelle skin. There is fruit, but always with something textural. The palate bears this out with a harmonious, even flow and gentle ripeness. There's a very smooth spine of ripe freshness.
