“La Staffa,” meaning stirrup, is taken from the town of Staffolo, which was founded by a chevalier. A horse farm can be seen in the surrounding hills of the Rincrocca vineyard.
La Staffa’s ‘Rincrocca’ is a selection of five clones of Verdicchio. The grapes are pressed immediately after harvest, and fermented spontaneously using indigenous yeast. They are then aged in cement tanks for a year, and then bottled to age for an additional two years.
