The rose Champagne everyone else imitates, and almost nobody makes the same way. This is a maceration rose: the Pinot Noir is destemmed and left on its skins for two to three days to take up color and aroma, rather than the far more common shortcut of blending a little still red wine into white. Bernard de Nonancourt introduced it in 1968, when rose Champagne was still treated as a curiosity, and it remains 100% Pinot Noir drawn from ten crus on the Montagne de Reims and aged around five years before release. Even the bottle is a period piece, its squat, rounded shape modeled on a flask from the time of Henri IV. What you get is unusually pure, direct red fruit with real freshness under it, which is why it works as well at the table as it does on a terrace.
