Chardonnay-led, in a category where the big houses usually lean on Pinot Noir — and that single choice explains the whole wine. More than half of La Cuvee is Chardonnay, which is why it comes across light on its feet, more citrus and white flowers than red fruit, built around freshness rather than weight. Laurent-Perrier, based in Tours-sur-Marne, made its name in the second half of the twentieth century by pushing that leaner, purer style at a time when most of Champagne was richer and more oxidative. The blend draws on more than a hundred crus with 15 to 30% reserve wine, and it ages around four years on the lees, well past the legal minimum for a non-vintage. Chill it properly and pour it into a real glass rather than a flute; it is an aperitif Champagne that doesn't fall apart next to food.
