Legrand-Latour was one of the most exciting Champagne arrivals in years, born from the wild story of Thibaud's father Patrice, who hand-dug tunnels beneath the family home hunting fossilized sea creatures, creating the Cave a Coquillages. Thibaud farms biodynamically by hand in Fleury-la-Riviere, ferments spontaneously, ages in barrel, and triggers the second fermentation with fresh juice from the next harvest, the Agrapart method, so the wines stay pure with no added sugar. Each cuvee is named for the geological layer beneath the vines. Ypresien is the Blanc de Noirs, Meunier-led with Pinot Noir off the marl and fossil-rich soils of Vandieres and Verneuil, built on the racy 2021 vintage. Barrel-aged then years on the lees, zero dosage.

"The NV (2020) Brut Nature Ypresien is 80% Meunier and 20% Pinot Noir. Aromatic and soft, the Ypresien is an understated Champagne, one that makes itself felt with a hush rather than a roar. All the elements are so well balanced. Crushed flowers, mint and dried amaro herbs lend complexity throughout.
