This is a white wine made from Xinomavro, a red grape, pressed straight off the skins so the juice runs pale in the manner of a blanc de noirs. It comes from Magoutes, the old vineyard above Siatista in Greek Macedonia that Dimitrios Diamantis's grandfather hand-grafted more than a century ago; Dimitrios used that genetic material in the 1990s to replant 18 hectares, and he is now pushing to make Siatista Greece's fifth Xinomavro-based appellation. The vines sit between 750 and 890 meters on clay and limestone in the foothills of the Askio range, an alpine climate closer to Carema or Valtellina than to anywhere else in Greece, and the farming is organic. Fermentation is spontaneous with nothing added and no manipulation, and the alcohol lands around 11.5%. Diamantis compares it to a very young, very pure Chablis and he isn't far off: it is lean and taut on release and fills out over a few years in the cellar.
