From a biodynamically farmed, high-altitude vineyard in Polisot (Côte des Bar), “Résonance” is Dominique Moreau’s flagship cuvée under the Marie Courtin label. It’s 100% Pinot Noir, fermented with native yeasts in stainless steel and neutral barrels, bottled unfined and unfiltered, and disgorged with minimal dosage (typically 2–3g/L).

The 2021 base vintage brings clarity and drive—red apple skin, white cherry, and chalky citrus lead into a dry, racy palate with savory undertones and long mineral resonance (true to its name). The mousse is fine, the finish taut, and the overall feel is one of quiet intensity and vibrational energy.

Serve with shellfish, sashimi, or anything that calls for cut and complexity. For fans of grower Champagne in the style of Vouette & Sorbée or Ulysse Collin, Résonance offers soulful structure and a clear sense of place.

Dominique Moreau's Champagne Marie-Courtin has been the darling of critics like Peter Liem for over a decade now. Why? Because she consistently leads the pack in her unwavering approach to expressing her incredible terroir.

Dominique farms (organically) a single 2.5 hectare plot of east facing vines in the Aube. Its clay and Kimmeridgian limestone soils, famously found in Chablis, produce some of the worlds greatest whites. The warmer Aube lends itself to ripening Pinot Noir—her favorite grape—laced with hallmark Chablisien acidity. These contrasting characteristics make the Marie-Courtin wines so enthralling.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
