Assyrtiko grown far from Santorini, on terraced hillsides five miles from the Myrtoan Sea in southern Laconia. Monemvasia Winery was founded in 1997 by George Tsimbidis, a physicist by training, and the family has farmed organically since 2005 across 30 hectares around the villages of Velies and Agios Dimitrios. The soils here are rocky limestone and schist with little organic matter, forcing roots deep and giving wines a saline edge, while cool northeast meltemi winds keep the hot, dry summers in check. Fermented in stainless steel with no oak, this is Assyrtiko at its most direct: a citrus-and-salt white built for the table.
