This is the bottle behind roughly a century of martinis, and it is still the reference. Noilly Prat is made in Marseillan, on the French Mediterranean coast, where Picpoul and Clairette base wines spend a year outdoors in oak casks, exposed to sun, wind and salt air. Almost nobody else bothers with that step, and it is the source of the briny, gently oxidative character that makes the style. The wine is then macerated with a mix of herbs and spices in large oak foudres before bottling, arriving dry, saline and herbal. The 375ml is the smart buy: vermouth is wine, it oxidizes, and this size means you actually finish it while it is still alive. Keep it in the fridge once it's open.
