The Ejutla expression is roasted in earthen pits under mesquite and oak. Fermentation takes place in open-air tanks before double copper pot distillation. This mezcal is beautiful clean with minerality - classic markers of high-altitude Espadin agave. The slow smoking process gives the mezcal delicate stone fruit notes with a blistered pepper smoke finish.
