Paris Sigalas spent decades building Santorini's benchmark Assyrtiko under his own name, sold the label, and then started over: Oeno P is the small project he built afterward, capped at around 20,000 bottles a year and made entirely in clay amphorae. Tria Ampelia means "three vineyards" — parcels in Fira, Akrotiri and Megalochori, all with vines over sixty years old, coiled into the low kouloura baskets Santorini growers weave to shelter fruit from the wind. Each site is whole-cluster pressed and fermented separately in amphorae of 750 to 1,600 liters, then left about sixteen months on fine lees, with no oak and no malolactic fermentation. The result has weight and texture underneath the acidity rather than just searing citrus. Give it a large glass and don't serve it ice-cold.
