If you are still growing Aligote on Puligny-Montrachet dirt, it is because you love the grape. This is the domaine bottling, from Olivier Leflaive's own vines in Puligny-Montrachet and neighbouring Corpeau, and 2021 is the vintage that made it interesting: spring frost slashed the Chardonnay crop, which left unusually concentrated fruit; the wine then rested ten months, four in stainless steel to keep its energy and six in oak barrel for texture. Olivier Leflaive set up on his own in 1984 on a then-novel idea, buying grapes and must rather than land but vinifying them exactly as a top domaine would; the estate vines behind this bottle are the other half of that story. Five years on, the wine has filled out without losing its nerve and is drinking right in its window. Serve it properly cold.
