In Catalonia, la hora del vermut is a genuine institution: late Sunday morning, a glass over ice, olives on the table, nobody in a hurry. This is the bottle built for it. Padro and Co. have been making vermouth in Brafim, outside Tarragona, since 1886, working from base wine made with their own Macabeo and Xarel-lo. The house red herb formula goes in after the first winter, and the blend then rests in casks for nine to twelve months before bottling. The Clasico is the everyday expression, leaning on rosemary and Mediterranean herbs, cinnamon and clove, with a clean wormwood bitterness running underneath. Pour it over ice with an orange slice and an olive, and add a splash of soda if the afternoon gets hot.
