This is the wine Saito gives the longest élevage — seventeen months in used barrels before a couple more in tank — and the extra time shows in its composure. Les Godeaux is a southwest-facing hillside parcel of clay-limestone in Savigny-lès-Beaune, a fifth of a hectare of organically farmed Pinot Noir bought from a grower. Seiichi Saito came to Burgundy from Japan in 2008 after wine school in Beaune, worked at Bize, Mugnier, Rousseau and Leflaive, and launched Petit-Roy in 2017; every red he makes is 100% whole cluster, fermented on ambient yeasts in tank with only gentle punch-downs, and bottled without fining or filtration. Village Savigny remains one of the more honest corners of the Côte de Beaune, and this is a serious example. 2023's reds are open and fresh, so there is no need to wait.
