One of Napa's great traditionalist Cabernets, made high on Spring Mountain by a winemaker trained in Bordeaux under the legendary Emile Peynaud. Philip Togni planted his estate at around 2,000 feet in the early 1980s, and his Cabernet (with Merlot, Cabernet Franc, and Petit Verdot) is built for the long haul: structured, mineral, and built to age for decades rather than impress young. This is the 1997, a celebrated Napa vintage, in magnum, the format collectors prize for slow, graceful maturation. A mature mountain Cabernet at a beautiful stage, and a large bottle to share.
