Apud Sariacum is what Sury-en-Vaux was called before the 12th century, and the wine is a portrait of that village: Sauvignon Blanc off steep slopes of caillottes, the pebbly Jurassic limestone responsible for Sancerre's steely, chalk-driven side. Philippe Raimbault is a ninth-generation grower there, just north of Verdigny, with vines on both banks of the Loire and parcels in Pouilly-Fumé and Coteaux du Giennois as well. 2025 was an early, dry year in the Centre-Loire — budbreak on April 7, the driest May and June in over fifteen years, an August heatwave broken by well-timed rain on the 20th — and Sauvignon picking began August 28 with small, thick-skinned berries. Expect the classic Sancerre snap rather than anything tropical or showy.
